That's all it took, in documented hospital cases, for some young children to end up with dangerously low blood sugar, loss of consciousness, and symptoms severe enough to initially be mistaken for a rare inherited metabolic disorder. In May 2026, European food safety regulators confirmed what those cases had been pointing to: a single serving of a slush ice drink can exceed the safe exposure limit for glycerol, the additive that gives slushies their texture, for children specifically.

Here's what's actually in a slushie, what the real cases looked like, and what regulators are now recommending.

What Glycerol Actually Is, and Why It's in Slushies

Glycerol, listed as additive E422, is a colourless, slightly sweet liquid used as a humectant — it stops liquid from freezing completely solid, which is exactly what gives a slushie its slush texture rather than a solid block of ice. It's used in small amounts in all sorts of packaged foods, from icing to chewing gum to cereal bars, but slushies are by far the highest-dose source, because it needs to be present in much larger quantities to prevent a whole drink from freezing.

Glycerol has become more common in "low sugar" or "sugar-free" slushie formulations specifically, partly as manufacturers reformulated in response to sugar taxes in the UK and Ireland. Because glycerol doesn't count as sugar, it let manufacturers cut the sugar content of a slushie while keeping the texture — without necessarily reducing the product's overall risk, since glycerol carries its own separate safety profile.

The Real Cases Behind This

A University College Dublin review examined 21 children, aged two to six, who became seriously unwell after drinking a slush ice drink, treated in hospitals across the UK and Ireland. Most became ill within an hour of drinking. None had a pre-existing medical condition. Symptoms included a sudden drop in consciousness, dangerously low blood sugar, a build-up of lactic acid in the blood, and falsely elevated triglycerides — a combination severe enough that some cases were initially investigated as rare inherited metabolic conditions before glycerol was identified as the cause.

One detail from the case review stands out in particular: a child who recovered from one episode later had another slushie and rapidly developed the same symptoms again. That kind of repeat reaction is exactly the sort of evidence that makes a direct causal link hard to dismiss.

What EFSA's New Assessment Actually Found

The European Food Safety Authority had reviewed glycerol before, in 2017, and found no reason to set a specific numerical limit at the time — the levels being used in products back then were significantly lower than what's common now. Following the accumulating case reports, the European Commission asked EFSA to reassess acute exposure specifically.

In May 2026, EFSA published a new opinion establishing, for the first time, an acute reference dose for glycerol: 125 milligrams per kilogram of body weight, for a single drinking occasion. The conclusion that follows from that number is stark: a single serving — 250ml for children, 500ml for everyone else — would exceed that safe threshold for every population group, not just children specifically, though children reach it with a much smaller volume because of their lower body weight.

EFSA also looked at a separate proposal to allow glycerol in de-alcoholised wine at higher concentrations, and found that if approved, an adult could exceed the safe threshold with as little as 190ml — less than a standard glass of wine.

Because there is currently no hard legal cap on how much glycerol a slushie can contain in the EU — it's regulated under a "use as much as is technically necessary" principle, rather than a fixed maximum — concentrations vary widely between products and manufacturers. EFSA has recommended that the European Commission now consider setting an actual numerical limit.

What Food Safety Agencies Are Telling Parents


In direct response to the new EFSA findings, Ireland's Food Safety Authority updated its guidance to recommend that children aged ten and under should not consume glycerol-containing slush ice drinks at all — a stronger position than its previous advice, which had only restricted younger age groups. The UK's Food Standards Agency advises that children under seven shouldn't have these drinks, and that children under ten should have no more than one 350ml serving a day — roughly the size of a standard can of soft drink.

Both agencies advise checking with the seller whether a slush drink contains glycerol before buying, and note the same advice applies to ready-to-drink pouches and home slush machine kits, not just drinks from a machine at a shop. If a child becomes unwell with a headache, nausea or vomiting soon after having a slushie, the advice is to give them something containing sugar and seek medical advice promptly, since the mechanism involves a sharp drop in blood sugar.

What We Don't Have: Australian-Specific Guidance

This regulatory action has happened in Europe, and we haven't found equivalent, specific guidance published by Australian food safety authorities yet. That doesn't mean the risk doesn't apply here — glycerol is the same chemical everywhere, slush ice machines use the same basic formulations internationally, and the biology of how a child's body responds to a large glycerol dose doesn't change at the border. If anything, the lack of local guidance so far is itself worth knowing, since it means the UK and Irish advice above is currently the most concrete, evidence-based guidance available for any parent deciding whether to let a young child have a slushie.

What to Actually Do

Ask before you buy — if you're getting a slushie for a young child, ask whether it contains glycerol before ordering, the same way you'd check for an allergen.

Treat under-10s cautiously, and under-7s more so — the strongest current guidance (Ireland) advises against glycerol slushies entirely for children ten and under; the more moderate guidance (UK) allows limited amounts from age seven up, capped at one 350ml serving a day.
3.
Watch for symptoms after the fact, not just before — headache, nausea, vomiting or unusual drowsiness within an hour of a slushie warrants giving the child something sugary and seeking medical advice, particularly for younger children.

This applies to home slush kits too — the same glycerol concentration concerns apply to pouches and machines used at home, not just drinks bought out.

The Bottom Line

A slushie is a small, ordinary treat that most parents wouldn't think twice about — which is exactly why this is worth knowing. Real children have been hospitalised, the pattern was consistent enough that regulators have now put an actual number on the risk, and the guidance from food safety agencies that have responded is more restrictive than most people would expect for something sold at a servo, cinema or fair. Australia doesn't have its own published guidance yet, but the chemistry doesn't change by country, and knowing to ask a simple question before buying costs nothing.
